- Olive Oil 4 tbsp, plus a drizzle
- garlic 4, thinly sliced
- Courgette 750g, trimmed and coarsely grated
- Dried Chilli Flakes ¼ –½ tsp
- Lemon juice only
- Rigatoni 350g
- Halloumi 150g
- Honey 1 tbsp
- Fresh Mint few sprigs, leaves picked and thinly sliced
- Sea Salt
- Black Pepper
