Soft tofu with black bean sauce
Ingredients
- Tofu 14 to 16 ounces, soft or firm silken
- Potato Starch 1 tablespoon
- Vegetable Oil 2 tablespoons
- Spring onions 2, thinly sliced, white and green parts kept separate
- Ginger 1 tablespoon, finely chopped
- garlic 1 tablespoon, finely chopped
- Fermented Black Beans 2 tablespoons, rinsed, drained, and coarsely chopped
- Stock 1 cup, unsalted or water
- Soy Sauce 1 teaspoon
- Kosher Salt ½ teaspoon
- Sugar 1 teaspoon
- Toasted Sesame Oil ½ teaspoon
- Ground White Pepper Dash
