Fish Fragrant Aubergines
Ingredients
- Aubergines 600g
- Cooking Oil for deep-frying
- Sichuan Chilli Bean Paste 1½ tbsp
- garlic 1½ tbsp, finely chopped
- Ginger 1 tbsp, finely chopped
- Stock 150ml hot or water
- Caster sugar 4 tsp
- Light soy sauce 1 tsp
- Potato Starch ½ tsp, mixed with 1 tbsp cold water
- Chinkiang vinegar 1 tbsp
- Spring Onion Greens 6 tbsp, thinly sliced
